Making use of every part of an animal is not a foreign concept, but over the past several decades people have gotten away from putting it into practice. Fortunately, the growth of the CSA has helped reverse this trend. Most people have enjoyed a nice Delmonico or porterhouse , but it’s probably a safe bet that you haven’t tried oxtail or ventured into tasting tongue. Though oxtail may not seem enticing at first, many of our shareholders have discovered it to be a special treat after they’ve cooked up their first batch of oxtail stew!

The Genuine Food Company believes in honoring our animals by using every part possible. To encourage our shareholders to do the same, we’ve taken the time to put together a collection of CSA recipes that will allow you to get the most out of your Meat CSA shares and also expand your culinary abilities. Some of the recipes were prepared by one of our co-founders, Winston, a nationally renowned chef and others are sent to us from CSA members.

By reconnecting with the origin of our food, our CSA shareholders have also had the opportunity to reconnect with their past. Whether it’s a dish that you’ve heard about from your parent’s childhood, or something likely to be hidden in the archives of your grandmother’s or great-grandmother’s cookbook, we’ve found this aspect of our CSA to be quite rewarding.
